Deep and clear ruby red with some light rims. Animalistic bouquet of licorice and ripe, deep dark fruits. A Cabernet Sauvignon of the extreme way. And in total contradiction to the "full-bodied" style you usually get today. Neverending finish. And on the palate again the dark fruits are dominating. You are looking for a pirate in a Premier Grand Cru Classé tasting? Here it is.
To open this special bottle was not planned. We prepared a goulash in a "non-usual" way. Some spices were sautéed in a pan. As soon as the aromas began to rise up, the beef goulash was sautéed, too; followed by carrots and onions. Deglazing with some water and adding additional spices. Shortly boiled up and for 90 minutes in the oven (400 °). At this point we decided to change the pairing wine. Instead of the planned Australian Shiraz we chose the Dunn Cab. The pairing was outstanding. Finally we served the goulash with cilantro rice and zucchini sautéed with honey, balsamic vinegar and basil. The wine supports the dish without overwhelming it. Provençal spicy notes arose. Wonderful!
This wine is definitely still at the beginning. Or perhaps it is still too early? Not surprising. The Dunn wines need a lot of time. This outstanding '97 Cab will still improve with further cellaring and you can enjoy it for the next ten or perhaps even 20 years. A masterpiece.
